i just milled my 4th PCB, a basic board to help soldering some wires to this tiny flat connector. I’d like to connect it to an esp32 and make a controller to play retro games

Perhaps, the connection are a bit unstable. I suggest using tape and place a layer of it over bridge between board and ribbon cable.
That flex cable looks like it goes into a ZIF connector. You may have better reliability if you made a PCB to put a connector on it.
What will you do to keep the wires from touching? Hot glue?
Is that a PSP joystick?
