Aren’t the fuses redundant? Every atx power supply I’ve used had short circuit protection. On the other hand if you’re trying to limit the current something can draw, I’d recommend breakers over fuses.
I made one years back and put it under instructibles under Klilly1 if you have the voltage regulator you can make 24 volts dc because combining -12 volts and +12 volts gives you 24volts with loss about 20 volts
Problem with these ATX power supplies is they’re noisy as heck. If you need bulk power they’ll get the job done but the idea of using them in analog circuits gives me anxiety.
Pretty nice unit! Adding switches to some of the outputs would be a nice addition, plugging and removing bananas is kind of awkward for connecting and disconnecting power several times.

Definitely saving this. I have half a mind to set up a proper EE workbench soon, and I have like three ATX supplies lying around doing nothing.

Yours is nicer/better form factor, but there are aftermarket products that achieve this same result for very little money ($10-15)
Looks nice, but I didn’t understand why you want to constantly load 5v? You can turn the PSU on by just shorting 2 wires.
